Hormone-Balancing Salmon & Quinoa Bowl

A simple, nourishing meal packed with protein, healthy fats, fibre and magnesium to help support hormone health and keep blood sugar levels balanced.
Serves: 2
INGREDIENTS
2 salmon fillets
150g quinoa
2 large handfuls of spinach
1 small avocado, sliced
1 head of broccoli, cut into florets
2 tbsp pumpkin seeds
2 tbsp extra virgin olive oil
Juice of ½ lemon
Sea salt and freshly ground black pepper
METHOD
Cook the quinoa according to the packet instructions, then fluff with a fork.
Toss the broccoli with 1 tablespoon of olive oil, season lightly and roast at 200°C (180°C fan) for 20 minutes until tender and lightly golden.
Season the salmon with salt and pepper and cook in a frying pan over a medium heat for 4–5 minutes on each side, or until cooked through. Alternatively, bake alongside the broccoli for 12–15 minutes.
Divide the quinoa between two bowls and top with the spinach, roasted broccoli, sliced avocado and salmon.
Sprinkle over the pumpkin seeds.
Whisk together the remaining olive oil with the lemon juice and drizzle over the bowls before serving.
